History, notes and your custom dictionary start out local, on the device that made them. Cloud sync is a switch in Settings, and it is off until you turn it on.
Turn it on and Go Echoo keeps a copy so a reinstall or a new machine does not start from zero. Dictations and notes are encrypted at rest; dictionary entries are stored in plain text because the server needs to recognise a duplicate term.
Encrypted at rest is not end-to-end — we hold the key and could read it, we do not, and the privacy policy states this in full.
